Just out of curiosity, I've been noticing a lot of extremely similar server list websites popping up over the last 6-8 months... Is there some hosting site that is renting out these generic sites or something? Lol

No, just quite of bit of server list templates/back end code is publicly available so people went mad. They keep popping up even tho everyone just uses minecraftservers.org, minecraft-server-list.com and minecraft-pm.com 
It's profitable to run them or at very least people think it's profitable because front page slots can sell for crazy amounts
Everyone just makes server lists using the publicly available free templates and drop them after a few months, realizing it won't get them anywhere. And to be fair, it's not just server lists, you can find all sorts of websites and products that are all the same generic rebrand, all usually fail after a few months, obviously never growing to be as popular as their top competitors.
That being said, there's been a couple of good new server lists in the last 3 or so years (Not trying to brag about Buzz or anything, I genuinely believe there's competitors that have made a good job). But they're not what you're describing, all are far from being a modified template.
Unless there's something to set you apart there's very little chance you're gonna see any success, a generic website template is obviously not the way to go about setting yourself apart.
