Server Setup for son

Trying to set-up a server for my son and his friends (8 - 10 year olds). I would like someone to set-up for me the following:

I have space on CubedHost (I get it, there are cheaper places. I bought from them because one of our favorite YouTubers uses them, oh well.) I want to keep it relatively vanilla, but with following thoughts:

• 1.11.2 - Spigot, but world generated with the Biome Bundle - I believe you have to generate the world in 1.10 and then move it. I know you loose a few of the biome mods, but just looking for the terrain and structures.
  
• Keep Inventory On (my son can still barely WASD)
• PVP off except for a PVP arena or maybe world?
• Some kind of beginner loot chest to get people started
• Prefer not to have claiming shovel, this will be a small group of friends and they need to 1) Learn to play nice but 2) I would like the ability to rollback issues/world edit
• My son loves Lucky Blocks, I think there are a few versions compatible with 1.11?
• Don't want economy, ranks etc.
• Any other suggestions for 8 year olds relatively new to the PC (but experienced in console versions)

Willing to pay a small amount.

I'm not trying to do that I was just surprised because I've done exactly this job and it lasted about 10 months) so yea I just though I was really well suited to this job in particular
