Do you mean HTTPS renewal for your domain that redirects to your dedicated server? Also why are you using letsencrypt when Certbot is much easier to use and renew?

I bought a dedicated server from OVH, paid someone to setup a panel, ran a minecraft server on it. I have absolutely no idea when I got it. I just know, that last time I had this issue: using sudo letsencrypt renew fixed it.

Only thing I have done since then is move my domain from namecheap to enjin.

That's not the issue, you set up a CAA record on your domain blocking which certificate authority can issue certificates to your domain. Simply go into your DNA panel and either remove the CAA record, or alter it accordingly to allow issuance from let's encrypt.
