I've been out from owning a server for quite some time, previously owning a factions server selling it early January 2020, I was wondering what genres and versions are most popular at the moment? Is it worth even starting? Finally, are servers still profitable?

High performance, consistent uptime and fast support. Minecraft hosting that just works.

Ask yourself what is "fun", that's your user retention.
Starting out is hard. It takes years of patience and investment to acquire a large/stable playerbase.
It is profitable if you have the playerbase.

SMP seems to be one of the biggest ones right now. Take it from me, and don't go back to facs - Factions is oversaturated.

Along with your Factions comment, Skyblock is also out of realism with Hypixel who've pretty well taken over that gamemode for the majority.

Minecraft is still alive and constantly growing, if properly advertised and made properly unique (which can be difficult), any server should have a greater chance at success.

Mini-games is pretty hard to start as is factions. I would personally look into something really niche and try to grow it from there. Rather than something saturated.

Factions as a gamemode isn't just oversaturated, it's also losing popularity. SMP on the other hand is seeing a surprise resurgence, especially as Mojang has been pushing out a series of ambitious updates that have helped attract more players to the game. This is a good thing, but running a server that can support 100+ 1.17 players is costly, especially with Java's poor optimization.
for me personally, bigger servers such as hypixel ruined gamemodes for me (except bedwards Kappa)
im super into vanilla mc or basic og skyblock usually
Diddo. Don't get me wrong, I loved OG Skyblock. When Hypixel announced their version of the classic, I was ecstatic. Yet when it came out, I was disappointed. Hypixel went ahead and overhauled everything, taking the classic Skyblock experience and evolving it into what is best described as a sky-island MMO. In Hypixel's version, you would collect resources and fight custom mobs to earn gold which you would use to upgrade your island and make it bigger. It was still Skyblock, but not the same Skyblock that I loved as a kid.
