I've been out of the loop for a while now and not paying attention to Minecraft lately. Are servers still monetarily worth it?

Not at all. Major networks like Mineplex, Hypixel, and Badlion (just 3 examples) pretty much take all the competition, as they've been around for years now. Most popular people and YouTubers play those kinds of servers. On top of this, it's extremely costly to pay for a server, hosting, OVH, advertising, dev work, builds, forums, TeamSpeak, and way more.

Minecraft as a game in general will probably only last a couple more years at best.

It really is a dependency. Servers like Mineplex are created as an idea already. They're launched with a pre-made budget, e.g $750. Of course Mineplex pays a lot less due to the owners being developers themselves. So, let us say you're not a developer. You're going to have to put a lot of stuff together, like the following:

A.) What do most people want to play? Usually Minigames. Other than that, the usual Factions & or Prison
B.) How much would a good developer cost? A good developer to create, I don't know, 1 plugin could be anywhere from $10 to $150. It all depends on how complex the plugin is.
C.) What would a good build team cost? Here it gets tricky-er. Buildings are relative. You're going to want a building that most people enjoy though. You could probably find a good build team on here. Guessing Ivan is the type of guy you'd want.
D.) Advertisement? Yes. You need to advertise, and a lot. With a few advertisements in the right place, you'll be flowing with customers. Each 10 customers, 1 is likely to donate just to make themselves look good on a staff application...

If you want a server to be popular these days you need to have a truck load of money for advertising or have a very uniqe server. Normal survival or pvp servers does unfortunately not cut it anymore.
er.. no. You'd be surprised at the amount of servers that are like 20k other servers that still make money. I had a factions server up a few months ago for about 3 months and it made over $250. Yeah that's not much for 3 months, however I put no effort into it in terms of advertising, staff, features, etc.. It's still possible, and nothing has died out yet.

Either setup a well organized server and have hundreds of $$ for advertising, or create a whole new gamemode/experience itself (minigames).

I, myself fortunately have the funds to stick with option one lol

To put things in perspective, PvpingMC, a server with 300+ playerbase, makes 2k+ a day.
Yeah... I guess thats a decent amount of money lol
