minecraft (offline/geyser)

if i want to use premium server ( online mode:true)
and use Geyser+JAVA do i choose offline/geyser option?

So choose Offline Store. - Then you can use usernames with {username} - BUT PLEASE make sure you have validation for player authentication, such as a pin code system in game, a Discord bot that DM's you or like a captcha based QR code map plugin.
