Paying someone to show or if you want for free to make it so its only 1.16.5 and not further for my server. For example 1.19.4 to latest version.

Wat. Do you mean you only want 1.16.5 or 1.16.5-1.19.x. Do you want to go down such as 1.8-1.16.5?

I mean, if you run 1.16.5 the players will only be able to connect with that version. ViaVersion allows newer versions to connect.

Most my plugins are 1.18.2
