When someone edits a post, I feel users should be able to see what the post said before they edited. It would help prevent scams and would save people from getting their time wasted.

Example: Someone offers to buy account for $200. You accept and take time to talk to them about the account then they say that they offered $100 not $200 even though they clearly just edited the post to try and get a cheaper price.

Don't really think it's that big of an issue that users need the ability to see that information. Staff can view edit history on posts.

I have yet to see a scam where something like this happened, can you not check your email to see the original message?

I'm not claiming that it can't be checked, I'm just saying they should add it because
A. It would be easier to view
B. Could save time wasting, and
C. could save the staff some trouble.

No, overall I think this ability should be reserved to staff. If someone were to share personal information by accident, they would not be able to remove it from view properly by editing their post.

If you believe someone has used the 'edit' option to hide evidence of a scam, simply mention that when reporting the user, and link the thread(s) it happened in (do NOT report all individual posts, please, we already get hundreds of reports as it is), and we'll take a look at the edit history of the post to see if we can find anything relevant.

Edit: For those that don't realize, not every user can remove their own posts by default. In addition, having that ability would sort of override this entire suggestion, since anyone trying to hide evidence could simply delete their post instead.

Can you staff view edit history on conversation posts?

I see no reason to allow people to view edit history of posts, reserving that functionality for staff is the best option.
