By law I have to pay 21% tax on these services. If I'd make a company out of my minecraft server, for example I'd sell ranks for perks, I can declare these costs at my tax service.

Get your legal issues sorted out before you start, otherwise you might end up in big trouble.

That makes absolutely no sense. By law you are required to list the tax on the invoice so your clients can do their administration and/or get tax reduction if registered as a company.
Can you assure 99.9% uptime, as stated in your post?
