I would start with learning Java first before you focus on Minecraft plugin development itself. Codecademy has an excellent beginner and intermediate java course. After that learn Bukkit and Spigot. Mineacademy is a great resource like mentioned above.

In my opinion, courses will not get you to a “professional” level. They can help you get started with the basics, but you will need to learn by yourself afterwards.

When I wanted to start, I got a UDemy course. Didn’t like that one so I bought like 3 more trying to find one I liked and ended up learning by myself and instead of starting with Minecraft like all those tutorials did, I learned Java instead. Long story short: Don’t buy a Udemy course, and if you are, get a Java one
