I've said this to other people but I'm just gonna say it again.

You should make some fun projects for a placeholder portfolio so people can see how your capabilities. It doesn't even have to be a demo site link, an image should do. Create some mockups or something. Just give people some sort of visualization of your design style. People will be much more intrigued in something unique looking. You never know, maybe a client wants one of your fun projects for their site.

Depends on what you think. I don't want to tell you what to design or how to make it. I want you to choose what you like most and design how you want to.

Here's some options:
Mockup Store Themes
Mockup Forum Themes
Mockup Portfolio Website (could even be your website if you want)
Mockup One Pagers
Mockup 404 Pages
Mockup Chicken? (sorry I'm hungry :p)

Literally anything you want. There's numerous options to choose from. Check out behance, dribble, or codepen and see people's artistic ideas and see what you can do thinking out-of-the-box.

Obviously, this is very customizable. I just don't have a lot of creativity when it comes to design unless I have certain guidelines.

Generally speaking your comment of "I just don't have a lot of creativity when it comes to design unless I have certain guidelines." Is really really gonna go against you, saying I can't design on my own in this industry is like saying "I work as a taxi driver but I cant drive without instructor pressing down clutch or brakes for me

What I meant by that is I can’t design a website based off of mock-up store without more details. As long as I have a goal I’ll be able to do it.

You're not going to get far doing designs based off what people want. You have to design based off what is best fit for their request.

Or maybe that's how you begin... I've been in your shoes before where I had zero imagination for a website. 2 years later, I'm designing sites I would never think of. I want to help because you remind me of myself.

Here's a fun project I want you to try. Take your time on this and try to think out-of-box. If you can't, that's fine. Look on codepen and see people's styles. Don't copy what they do. See how they did it and try a different look.
Criteria:
- Portal page (be different with it)
- 5 links (not in the center of page. Be different)
- icons/images are optional
- let's go with medieval themed
- font that matches the site theme. Roboto, Oswald, or Lato will not be the way to go for a medieval style
- Find a no copyright logo and use that to base the design scheme off of

If you don't know how, then still try. No harm in trying :)

Again, take your time on this.
