From a seller's POV, we process mostly Stripe payments and our system has a very high emphasis on security and complies with PCI regulations (Google it). Before we started accepting Stripe, we accepted PayPal only so, obviously, most of our payments were from PayPal, with the odd manual UK Bank Transfer or Bitcoin payment. Now, throughout the board, we accept Stripe, PayPal and Bitcoin. PayPal processes about 40% of payments. Stripe about 48% and 2% is Bitcoin. PayPal is used very commonly even though we charge a very high gateway fee for it, and I believe a lot of customers use Stripe to avoid the gateway fee.
So yeah, PayPal is most common. Stripe isn't a gateway, as such. It's just a way to process CC payments securely. Bitcoin is still in-superior in most markets.
