a 16gb shared hosting with an
E3-1245v5 CPU
or a vps
with an i7 600k

E3 1245v5 will be more stable in the long run as it actually a CPU meant for servers (server grade) while the i7 6000k will fetch you more "raw" power at the expense of being a CPU that meant for non 24/7 operations (desktop grade).

Weighting between the two I would much rather stack up on stablility than "squeezing" every last drop of performance.

Do you mean i7-6700k? If so that is a much better option performance-wise. The only difference is the e3 has ECC RAM support, but bit flipping really doesn't effect Minecraft, and the benefit of DDR4 ram with the 6700k might be noticeable enough for you to care.

If you mean the 1st gen i7, the e3 1245 v3 is the better option.
