I'm starting a hosting company. I'm either selling VPS or minecraft. What type of server should i buy. My budget is $500.
Depends, VPS and Minecraft servers can have processors that differ. For example an i7 would be nice for Minecraft but for a VPS, your not going to have much room to work with due to the number of cores and threads.

I guess I'm more interested in lots of core because I feel like the VPS business is better for me

Well, in that case then you have a few options that I hope you would consider.

Number one.
DO NOT buy from a small company on MCM. They most likely resell and you can save money by buying direct.

Number 2.
For US based hosting i would go with OVH or SoYoyStart. They are the best and the largest hosting company in the world.

Now, if you want to save money in the long run and make more in the long run, go with collocation maybe from Ian.D or Psyco.

I'm selling my HP ProLiant DL360 G6. I use the same machine from some Virtual Machines I host at home that run some Minecraft Servers and my Plex Machine.

Pretty sure I’ve offered you machines in the past to offer budget vps. Most of my machines have been bought but if you’re still interested I’m sure I can get some more.

From my perspective, $500 won't get you much quality* (ish).

$500 will get you a Dual E5-26xx v1 server at best. eBay usually has some deals on Dual E5-2650 - E5-2670 servers with at least 32GB DDR3 ECC RAM.

Natex itself has some decommissioned servers that utilize Foxconn motherboards with Dual E5's at a fairly low price. (Though, KVM is usually not available on these Foxconn IPMI boards.) Be warned, however; even though these CPUs are powerful, they are also quite old and power hungry. Most colocation providers usually don't provide a lot of power.

Otherwise, you could probably get an E3v1 or if lucky, an E3v2 server on eBay for under $500. (Unless you're super lucky and find an even better system off eBay.)

Additionally, I'd recommend purchasing 2 or more SSDs and run them in a RAID1 (or RAID10 if you have 4 drives) config. (RAID0 if you're feelin riskayy but that's not recommended.)
