maybe - [00:16:25 ERROR]: Failed to read chunk [-106, -126? A chunk error or an issue with insufficient memory? Haven't touched MC in years so this is just a rough rough guess.

Your allocated memory ran out / a process throttled your threads.

Following reasons can be:

Too many items on grounds
Too many mobs at one place
You did world edit of a large thingy
Your open file limit per pid is low

Can be any of them. This log doesnt tell us enough only that your server memory was used up totally. I suggest using aikar flags (search up on google) for better gc and asyncworldedit (works for 1.17 too) as a world edit addon. If its one of the first two problems i mentioned you can do /killall mobs or /killall drops

youre ran out of ram dynmap cause high cpu and ram usage while generating map, upgrade your ram and generate dynmap when there is no players you can also decrease radius in dynmap configs, also try aikar flags and bukkit, spigot and paper optimizations try any good fork of paper like tunity or airplane for high performance ( this wont/affect very little on ram and cpu usage cause by dynmap) and the pregenerate chunks using plugins like chunky will help you a lot with optimizations
