Which database do you prefer to use on minecraft project?

Exists a lot of databases, but on a start you need to choose from this large list.

For example: As for me the best solution is MongoDB.
It have a data structure which suits for my requirements.
Flexible, Fast and easy to use.

Learn and use SQL, trust me. I'm in college and everyone in the industry uses SQL for their companies.

MongoDB, I like the document-oriented style, and that it has no SQL.

Not entirely sure why everyone is saying SQL or MongoDB, it literally is up to you as a developer to find which database would suit your project the best. This question doesn't really make much sense, there is no database to prefer, it all varies on the software at hand and the amount and type of data you have to deal with (as well as various other conditions).
