Targeted advertising is more complex and advanced than you believe, however.
If you let them, google will now track your activity on its engine and any websites that its trackers are placed in. An algorithm can then categorize those data to determine what kind of demographic you belong to. From there they can track your interests and target ads that fit both.
And that is probably way too simple still.
PS: if you want to get rid of those trackers, get an addon like Blur or Ghostery. These addons block any trackers they find on websites you visit.
