Would anyone play a barebones vanilla server?

I'm thinking of making like a vanilla server but just adding basic things and maybe some advanced features. Like vanilla Minecraft but maybe add some custom dungeon areas with AI Players guiding it and if you defeat them you get good gear, some other stuff like that.

Or maybe a Valorant/CSGo inspired server. Again AI could be used so the server is playable at all times.

Idk thoughts on either of those?

No like just a few locations with dungeons that have AIs that you gotta kill instead of zombies
