I'm not looking for anyone stupid with 1k subscribers who wants to do a video for $20 I want to get arround 2-3 EP from one YouTuber who generates a decent amount of players for my server.

I currently get around 10-20 players tops, that's peak time.

Most people with a high subscriber rate won't accept this, they'd want half of the price upfront and the other half after.

That's the YouTubers you've worked with. Most YouTubers I've seen on MCM or people with a higher fan base/subscriber base want half upfront because if you don't pay(which I'm not saying you don't), that's their time wasted.

Honestly, you can't provide any proof, you might have the money but you still might not send it. I suggest using a middleman, give the middle man half of the upfront, then when he makes the video, send the rest to the middleman and the middleman sends the whole sum of money to the YouTuber.

Alright, any trusted Middlemen that have done stuff like this before that you know off?

Not sure, most people don't middleman PayPal, but you can surely find someone.

Alright, i'll just try and find someone trusted as middleman with paypal as when i got GBP it taxes me I think.
