Long story short, I'm going to be purchasing a new computer, the only thing I'm sort of worried about (will it be enough?) for the components is the PSU/Power Supply.

Those are the specs:

CPU: Intel Core i7 7700K @ 4,2GHz
GPU: GIGABYTE GeForce GTX 1070 WINDFORCE OC 8G
MOBO: ASUS ROG Strix Z270H Gaming
Case: Phanteks Eclipse P350X Black
RAM: Corsair Vengeance 16GB DDR4 @ 3000Mhz
SSD: Crucial P1 500GB M.2.@ 1.900MB/s
Cooler: Corsair Hydro H100i
OS: Windows 10 Pro
PSU: Seasonic Focus Plus 550 Gold
559W - (80 Plus Gold) - modulair

High performance, consistent uptime and fast support. Minecraft hosting that just works.

am I at least going to be able to play Minecraft lowest settings and get 5 FPS?
Bruh moment

I'm using ultra shaders with a 1070 and I gain 80 fps and 255 mods with a ryzen 5 1600. What you want is overkill for Minecraft lowest settings at 5fps. (/s)

I ran a 2200g and gtx 1080 on a 450W PSU for a day, 550W is enough for those parts.

550 is good enough, but i prefer having 100-200 excess for future proofing if you want to upgrade your pc in the future.

okay the real question here is why the fuck are you pairing that piece of shit apu with a gtx 1080 LOL
It was just for a day while waiting for an Evga 750W platinum PSU. Anything longer than a day would be just silly.

Don't buy a i7 7700k get a 8700k (you will need a different motherboard)
