A VPS is a completely separate machine that OVH hosts and will keep online 24/7.
Your laptop/desktop is not connected, and the VPS will only turn off if you log into your OVH panel, and shut it down.
Which I don't even think you can do, I believe you can only restart OVH hardware, not turn it off completely.
All you're doing when you connect to the VPS is remoting into it from your machine. So your laptop acts as the monitor, to a computer that can be anywhere in the world.
You're completely safe to turn off your machine.

If you would really like to check, you can always shut down the laptop, and use your phone (if you have one) to access OVH's control panel, and see that the VPS is still online and functioning.Thank you so much.
