Expanded shop catalog, sort by price, fix achievement GUI click collision

• Add all saplings and seeds to the Farming shop category, priced high
• Add basic stone-family blocks ($50 ladder), re-pricing grass/cobble and

retiring the polished granite/diorite/andesite/deepslate variants

• Sort every shop category cheapest -> most expensive (was newest-first)
• Make server block listings create-or-correct price on startup, and delete

retired listings idempotently
- Remove Food & Potions and Redstone categories; shrink the main marketplace
menu to 27 slots with the 5 remaining categories centered
- Fix achievement GUI clicks triggering marketplace purchases by matching only
genuine "<Category> (count)" titles instead of any title with parentheses
- Add all alive/dead coral blocks, corals and fans to sellable items
