I will be considering a 6-8gb plan but can you give me a brief explanation of a VPS?

VPS is similar to have a physical server in terms of what you can do with it. How it's setup is there's a dedicated server and for example that can then be split into 5 virtual private servers (VPS) Each of those 5 will be allocated dedicated resources to use from the physical server itself.

They run on Linux so you'd probably need some basic Linux knowledge to get started

Yes they are, we use OVH for our nodes.

Correct me if I am wrong but I don't see that it states anywhere that they "own" the datacenter nevertheless it just shows pictures of what the datacenter they rent from looks like.

"Our datacenters in photos" is enough to make someone think they are talking about their own datacenters. They are not "our" unless you own them.
