From what I've heard it is difficult to win a dispute over virtual items if you are the seller, but I wouldn't know much about that because I have never had to deal with one.
You would have been right until not so very long ago, when they added a provision for digital items.

So how do we know that MM's such as Acrimonia and Nighterblade won't make an "exit scam"?

You can't generalize the entire population of "trusted" users based off of a few users actions. This post will give new, low reputation users a reason to force a more trusted member to go first, which could potentially open up a bigger problem of new users scamming trusted users.

Ratings are not equal to reliability, and there are always people willing to take the risk. I recently sold a build to a 0 rep person, and it went quite smoothly.
the things described in this thread show that lots of rep doesnt being reliable (though there is a correlation ofc), but it works the other way too, so having no rep doesnt mean you're not reliable. its just a lower chance.

Like just don't be stupid and you won't be scammed. It's honestly not hard, I've done deals on deals on MCM and never been really scammed anything.
